According to a recent study released by CSIRO, 12.1 per cent of Australians aren't eating gluten...and that number is rapidly increasing.
The Gluten Free diet excludes the protein gluten, which is normally found in wheat and related grains (including barley, rye and oats). To have a gluten intolerance means the body is unable to digest and break down the protein which is found in these foods.
